Ingredients
Plums: I am fortunate to have a garden with a few fruit trees, in between a very prolific plum tree. If you need to buy plums, I recommend going to a Farmer’s market and getting plums which are a bit tart. Black Doris plums, for example, are excellent for baking. For my easy plum cobbler recipe I have used frozen plums (I let them thaw before using them). So fresh or frozen plums are equally suitable.
Apples: Mixing a few apples with our plum compote, in my view, enhances the flavor. Cooking apples are the most suitable for this plum cobbler recipe.
Our cobbler topping: In addition to flour, I’m incorporating ground almonds into the mixture. This will give the cake-like topping a lighter taste with a crumbly and buttery texture.
Brown sugar: Brown sugar adds and intensifies the flavor of the plum and apple compote. Only use a little bit because the plums have a high content of natural fruit sugar already.

Make Our Easy Plum Cobbler Recipe Step-By-Step
Preparing The Fruit Compote
In a large bowl, we prepare our plum compote by adding the zest of a lemon, brown sugar, and cornflour. I had prepared my plums by halving them and removing the pits. They were stored in the freezer and I thawed them before use
Adding The Apples
Now, add the apples that have been peeled, cored, and cut into small pieces. Combine them with the plums and place the mixed fruit into the baking dish.
Bake The Fruit Mix
Now, bake the fruit mix in the oven for around 30 minutes. The fruit juice ought to have reduced and thickened nicely. As the dish bakes in the oven, it’s time to prepare the topping for the plum cobbler.
The Topping
My ‘secret’ ingredient is ground almonds, which give the batter a delightful light texture and a rich nutty flavor. Next, we add cubed butter, rubbing it into the mixture of flour and ground almonds until it takes on a crumbly texture.
Final Touches
The last step to finish our batter is to mix in our egg/milk mixture. I use a butterknife to blend the wet and dry ingredients. This technique helps prevent overmixing the batter.

After spreading the batter over the fruit compote, continue to bake the plum cobbler for an additional 30 minutes until it turns golden brown and bubbly. Serve with a scoop of vanilla ice cream on the side and enjoy.

For The Fruit Compote
- 3 cups fresh or frozen plums (halved and pits removed)
- 2 apples (cored, peeled, and chopped)
- zest of half a lemon
- 2 tbsp cornflour
- 1/4 cup brown sugar
The Batter
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup ground almonds
- 1/2 cup brown sugar
- 100 grams cold butter (cut into cubes)
- 1/3 cup milk
- 1 egg
Instructions
Make The Plum Compote First
- Cut the plums in half and remove the pits. If you use frozen plums, let them thaw first. Put the plums into the baking dish.3 cups fresh or frozen plums (halved and pits removed)
- Peel and core two apples and chopped them into smallish pieces. Mix them in with the plums.2 apples (cored, peeled, and chopped)
- Stir in the zest of the lemon.zest of half a lemon
- Add the cornflour and the brown sugar to the fruit and combine well.2 tbsp cornflour, 1/4 cup brown sugar
- Bake the fruit at 180 C/350F for 30 minutes. The fruit juice should be reduced by then nicely.
Make The Batter for The Topping
- Mix the baking powder into the flour and combine well. Add the ground almonds and the brown sugar.1 cup all-purpose flour, 1/2 cup ground almonds, 1/2 cup brown sugar, 1 tsp baking powder
- If the sugar has lumps, break them up with your fingertips or a butter knife.
- Add the butter cubes and rub them in with your fingertips until the mix resembles crumbles.100 grams cold butter (cut into cubes)
- Stir the egg into the milk and then add the egg/milk liquid gradually to the crumbles. Mix everything together with a knife until well combined. Be careful not to overmix.1/3 cup milk, 1 egg
- Take the baking dish with the compote out of the oven and place on your benchtop. Use a large spoon or spatula and spread the batter on top of the fruit compote until most of it is covered.
- Put the dish back into the oven and bake for a further 30 minutes.
- Enjoy while still warm with some ice cream on the side.
