Ingredients
This simple yogurt plum cake requires just a handful of basic ingredients. Naturally, plums and yogurt are the stars of the recipe. Let’s delve into it.
Plums: Even though I prefer fresh or frozen plums for our cake recipe, you could also use canned plums. Just make sure to drain the plums thoroughly before layering them on the batter. Black Doris plums are my favorite type of plums to use for this yogurt cake.
Yogurt: I recommend using a full-fat yogurt or Greek yogurt for this recipe to achieve the best flavor and taste.
Brown sugar: Brown sugar not only enhances the flavor of the plums but also adds a hint of caramel to the cake. You could substitute brown sugar with raw sugar.
How To Make The Yogurt Plum Cake Step-By-Step
Our yogurt plum cake is so moist and flavorful, the perfect Summer dessert.
Step 1
It is important to beat the sugar and butter until the mixture is nice and fluffy. Only then do we add the eggs, one at a time, ensuring each is fully incorporated before adding the next.
Step 2
Once we’ve sifted the flour, we switch from using an electric mixer to a spatula to gently fold in the flour.
Step 3
Next, we incorporate the yogurt and the zest from half a lemon into the mixture.
Step 4
Let’s assemble the cake. First, pour half of the batter into the springform pan and add a layer of plums on top. Next, spread the remaining batter over the plums.
Step 5
The final step involves adding a second layer of plums on top. Then, bake the cake at 180 degrees Celsius (350 degrees Fahrenheit) for approximately 40 minutes.
Last Step
After the cake has cooled slightly, carefully remove it from the pan. Finish the plum cake with a light sprinkling of icing or powdered sugar. Enjoy!
