So Fruity & Delicious - Our Easy Plum Cobbler Recipe

Our delicious plum cobbler tastes like Summer. Fruity with a hint of lemon and a buttery cake-like topping. The perfect dessert to finish off a light dinner, serve it with a scoop of vanilla ice cream. Irresistible!

Ingredients
  

For The Fruit Compote

  • 3 cups fresh or frozen plums (halved and pits removed)
  • 2 apples (cored, peeled, and chopped)
  • zest of half a lemon
  • 2 tbsp cornflour
  • 1/4 cup brown sugar

The Batter

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup ground almonds
  • 1/2 cup brown sugar
  • 100 grams cold butter (cut into cubes)
  • 1/3 cup milk
  • 1 egg

Instructions
 

Make The Plum Compote First

  • Cut the plums in half and remove the pits. If you use frozen plums, let them thaw first. Put the plums into the baking dish.

  • Peel and core two apples and chopped them into smallish pieces. Mix them in with the plums.

  • Stir in the zest of the lemon.

  • Add the cornflour and the brown sugar to the fruit and combine well.
    2 tbsp cornflour, 1/4 cup brown sugar
  • Bake the fruit at 180 C/350F for 30 minutes. The fruit juice should be reduced by then nicely.

Make The Batter for The Topping

  • Mix the baking powder into the flour and combine well. Add the ground almonds and the brown sugar.
    1 cup all-purpose flour, 1/2 cup ground almonds, 1/2 cup brown sugar, 1 tsp baking powder
  • If the sugar has lumps, break them up with your fingertips or a butter knife.
  • Add the butter cubes and rub them in with your fingertips until the mix resembles crumbles.
    100 grams cold butter (cut into cubes)
  • Stir the egg into the milk and then add the egg/milk liquid gradually to the crumbles. Mix everything together with a knife until well combined. Be careful not to overmix.

  • Take the baking dish with the compote out of the oven and place on your benchtop. Use a large spoon or spatula and spread the batter on top of the fruit compote until most of it is covered.
  • Put the dish back into the oven and bake for a further 30 minutes.
  • Enjoy while still warm with some ice cream on the side.
