Ingredients For Our Best Christmas Breakfast Casserole
I love the vibrant colors like the bright green from the spinach, the glorious red bell pepper, and the yellow from our farm fresh eggs.
Fresh Eggs: If you can, please get the freshest eggs possible. I prefer organic eggs from chickens who can roam freely. I am lucky to have friends with chickens in their backyards.
Cherry Tomatoes: Cherry tomatoes add a sweet touch to this hearty and rustic dish. However, finding flavorful tomatoes during winter can be difficult. If they’re too costly or lack taste, it’s best to omit them.
Bell Pepper: I have chosen to add red bell pepper but you could also use green and/or yellow peppers. It is great that these vegetables are available all year round and have a good flavor.
Spinach: The same applies to spinach, available all year round, this is a must-have in our Christmas casserole.
Tater Tots: I love tater tots and they bring so much substance to this dish. Just use your favorite brand. It will taste amazing.

Prepare In Advance: A great advantage of this delicious Christmas breakfast casserole is that you can prepare the ingredients ahead of time and simply assemble everything on Christmas morning. By doing so, you can cherish quality family time without any stress or pressure.
Vegetarian or Meaty?: I love that you can add your favorite vegetables and also meat to the recipe. My daughter is vegetarian so I always have to make sure to give her options. But you could add ham or bacon to the casserole as well. If you prefer the meatless option, feel free to add more vegetables like different colored bell pepper, finely chopped red onion, grated carrots, or grilled zucchini slices.
Tater Tots: The tater tots give this dish a lot of substance and a special extra yumminess.
Leftovers: If you are lucky enough, you might even have some leftovers for the next day. Store them in an airtight container and the Christmas casserole should keep well in the fridge for at least a couple of days.

Make The Best Christmas Breakfast Casserole Step-By-Step
Prep All The Ingredients
This is by far the most time-consuming part. Chop the onion, pepper, spinach, parsley, and half the cherry tomatoes. Get the cheese ready as well as the eggs. You can prep everything the day before Christmas and store the ingredients in containers until you are ready to use them.
Precook The Vegetables
It is vital, to precook the bell peppers and the onion. Simply sauté them in a little olive oil, and season with salt and pepper.
Get The Eggs Ready
In a large bowl, crack the eggs, season with salt and pepper, and whisk them vigorously. You can then add the milk and whisk until well combined.
Putting The Casserole Together
Now you can add the remaining ingredients to the egg/milk mix: spinach, parsley, cheese, bell pepper, onion, and the tater tots. Now, fill everything into a large casserole dish.
The Final Touches
Lastly, garnish the casserole with the cherry tomatoes. Put the dish into the preheated oven and bake for around 45 minutes.

The Best Christmas Breakfast Casserole
Equipment
Ingredients
Egg mixture
- 6 large eggs
- 1 cup milk
- salt and pepper to taste
Ingredients to go into the casserole
- 1 red bell pepper/capsicum
- 1 brown onion, diced
- 100 grams baby spinach
- 1 bunch flat parsley
- 1 cup grated cheese (I used Colby cheese)
- 2 cups frozen tater tots
- 1 cup cherry tomatoes, halved
- salt and pepper to taste
Extra
- 1/3 cup extra virgin olive oil
Instructions
Prep All The Ingredients
- Wash and cut the bell pepper. Take the seeds out and cut them into smaller pieces.1 red bell pepper/capsicum
- Dice the onion.1 brown onion, diced
- Heat up 2 tbsp of olive oil and fry the bell pepper and onion on medium to low heat until the onion is translucent. Set aside.1/3 cup extra virgin olive oil
- Roughly chop the spinach and set it aside.100 grams baby spinach
- Finely chop the parsley and add to the spinach.1 bunch flat parsley
- Grate the cheese and set it aside.1 cup grated cheese (I used Colby cheese)
- Get the tater tots ready. They should be still frozen.2 cups frozen tater tots
- Cut the cherry tomatoes in half.1 cup cherry tomatoes, halved
The Egg Mixture
- Crack the eggs into a large bowl.6 large eggs
- Add the milk and season with salt and pepper.1 cup milk, salt and pepper to taste
- Mix well with a fork or whisk.
Put It All Together
- Now add all the ingredients you have prepared earlier to the egg mixture, except the cherry tomatoes.
- Mix well until combined.
- Put the mixture into the casserole dish.
- Even the mixture out. Put the halved cherry tomatoes on top. Season again with salt and pepper and drizzle over some olive oil.
- Bake in the preheated oven at 180 Degrees Celcius/350 degrees Fahrenheit fan-forced for 45 minutes or until set in the middle.
- Once cooked, let it cool down for a few minutes. Serve with a side salad and our favorite dip. Refer to recipe notes for more details.
