My light and fluffy sourdough buttermilk pancakes are the perfect addition for your Sunday breakfast or brunch and in my post, I will show you how easy they are to make.

I absolutely adore using sourdough in my baking. Anything made with a sourdough starter as a leavening agent tastes so much more flavorful.

That is especially true for our delicious sourdough buttermilk pancakes, as well as sourdough pizza, focaccia made with sourdough, and of course sourdough bread.

For this simple buttermilk pancake recipe, Iโ€™m using a sourdough starter that I recently made.

How To Activate Your Sourdough Starter

I usually leave my sourdough starter in the fridge where it hibernates until I need it for my baking.

The day before I plan on using the starter, I take it out of the fridge and feed it with flour and water. Then I cover the jar with a clean cloth and leave it in a warm spot until the starter develops bubbles and increases in volume. This indicates that the starter is active and ready for use.

How To Make Sourdough Buttermilk Pancakes Step-By-Step

Activate Your Sourdough Starter

The day before you want to make the pancakes, activate your starter by feeding it with flour and water. Cover with a cloth and put the starter in a warm place. Once the volume has increased and you can see bubbles, the starter is ready.

Mix The Wet Ingredients

First off, we mix the wet ingredients: eggs, sugar (not a wet ingredient but needs to be whisked with the eggs), vanilla extract, sourdough starter, milk, and buttermilk. Whisk thoroughly until well combined.

Add The Dry Ingredients

The dry ingredients consist of all-purpose flour and baking soda. Add it gradually and mix it well until you have a thick and smooth batter.
Once it is all mixed, let the batter rest for about 30 minutes or longer.

Making The Pancakes

Grease a medium-sized frying pan (non-stick works best) and heat it. Laddle one large spoon of batter into the pan and fry on medium heat. When bubbles form on the surface, itโ€™s time to flip the pancake.

Get Flipping

Once you flip the pancake, let it cook for another 1 to 2 minutes until golden brown and cooked through.

Get Stacking

I like to stack up the pancakes once they are all cooked. Put some butter on the top and drizzle generously with maple or golden syrup. Yummy!

Simple And Delicious Buttermilk Sourdough Pancakes

These pancakes made with buttermilk and sourdough starter are light and fluffy โ€“ the perfect treat for Sunday breakfasts or lunch.

Ingredients

  • 2 eggs
  • 1/3 cup raw sugar
  • 1 tbsp vanilla extract
  • 1 cup sourdough starter
  • 1 cup buttermilk
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • extra oil for greasing the pan

Instructions

  • First off, whisk the eggs with the sugar and vanilla extract in a large bowl.
    2 eggs, 1/3 cup raw sugar, 1 tbsp vanilla extract
  • Add the buttermilk, milk, and sourdough starter and whisk until well combined

  • Combine the baking soda and flour, then incorporate these dry ingredients into the mixture. Continue to whisk until it reaches a thick and smooth consistency.
    2 cups all-purpose flour, 1 tsp baking soda
  • Cover the bowl and leave the batter to rest for at least 30 minutes.
  • Heat the greased frying pan on medium heat.
  • Using a large spoon, scoop the batter and pour it into the pan. Fry until you see bubbles appear.
  • Once the bubbles appear, flip the pancake with a spatula.
  • The pancake is cooked when it is golden brown on both sides. It should take around 3 to 4 minutes.
  • Stack them and serve with your favorite toppings. Enjoy!
