Ingredients For Our Corn Fritters

The Corn
I usually advocate for using fresh ingredients, but in this recipe, I make an exception. I find it most convenient to use canned sweet corn since it’s always available in my pantry. This allows me to quickly whip up a snack whenever needed or when we have unexpected visitors.
I recommend using a mix of whole-kernel and creamed-style corn for the best consistency.
The Eggs
I recommend using at least free-range and organic eggs when possible. We are fortunate to receive eggs from a friend who has backyard chickens.
And what a difference it makes to get eggs from chickens who are allowed to roam freely and where they can peck on fresh grass and catch worms.
Herbs
Fresh is best especially when it comes to using herbs. My basic recipe calls for parsley. Of course, you could use it in dried form but fresh herbs provide a better flavor.
If you only make the basic fritters recipe you could also use finely chopped chives as well.
How To Make Corn Fritters In A Few Simple Steps

We serve our deliciously crispy corn fritters three different ways with a light and tasty yogurt dipping sauce.
Prep The Ingredients

Before we begin mixing the batter for our basic corn fritters, I always like to prepare my ingredients in advance. First, let’s take a sharp knife and finely chop the garlic, red onion, coriander/cilantro, spinach, and parsley. Then, cut the feta cheese into small cubes.
Mix The Basic Corn Fritter Batter

Combine the flour with the seasoning and add the eggs. Mix it with a whisk until it forms a thick paste. Next, you can add the cans with the corn, and the finely chopped parsley. Carefully combine everything by using a plastic spatula or large spoon.
Now, you can divide the batter into to bowls. Leave some of the batter to make fritters from our ‘basic’ batter.
Add Ingredients To Make The Indian And Mediterranean Style Fritters

Now, you simply add our ingredients to each of the bowls: one for the Indian isnpired fritters, and the second for the Mediterranean corn fritters. In both cases, gently stir in the ingredients and avoid overmixing the batter.
Fry The Corn Fritters

Add olive oil to a non stick fry pan and heat it up. Next, add a tablespoon full of batter for each fritter to the pan. Fry on medium heat until you can see a brown edge forming on the fritter. Now it is time to flip the fritters over.
Keep Cooking

Now reduce the heat to a low to medium heat. Gently press the fritters with a spatula so they cook evenly. Check after 2 minutes if the underside is golden brown. Take the fritters out and keep them warm in the oven.
Use Up The Batter

Repeat the steps as described above until you have used all of the batter. Add more olive oil to the pan as needed.
Enjoy while still warm with our tasty yogurt dipping sauce.
Extra Tips
Pro Tip 1
Avoid over-mixing the batter. Gently incorporate the ingredients until just combined. Otherwise, the fritters may become kind of rubbery.
Pro Tip 2
Cook the fritters over low to medium heat to ensure they cook through completely. Flip them once you notice a brown edge on the underside.
Pro Tip 3
To ensure even cooking, press the fritters gently down with a spatula.

Basic Corn Fritters
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- freshly ground pepper to taste
- 2 eggs (preferably organic)
- 1 can creamed-style corn
- 1 can whole kernel corn
- 1/2 bunch parsley finely chopped
Indian-Inspired Corn Fritters
- 1/2 red onion finely chopped
- 1/2 bunch coriander finely chopped
- 1 tsp Turmeric
- 1/4 tsp chili flakes
- 1 clove garlic finely chopped
Mediterranean- Style Corn Fritters
- 50 grams spinach finely chopped
- 100 grams feta cheese cut into small cubes
- 1/2 red onion finely chopped
For Frying
- 1/4 to 1/2 cup olive oil
Instructions
Prep The Ingredients
- Before we begin mixing the batter for our basic corn fritters, we prepare the ingredients. Let's take a sharp knife and finely chop the garlic, red onion, coriander/cilantro, spinach, and parsley. Then, cut the feta cheese into small cubes.
Make The Batter For Our Basic Corn Fritters
- In a large bowl, combine the flour, baking powder, salt, and pepper. Whisk until well combined.1 cup all-purpose flour, 1 tsp baking powder, 1 tsp salt, freshly ground pepper to taste
- Add the eggs and mix until you get a thick paste-like consistency.2 eggs
- Next, add the cans of creamed and whole-kernel corn along with the finely chopped parsley. Gently mix the ingredients with a spatula. Try not to over-mix.1 can creamed-style corn, 1 can whole kernel corn, 1/2 bunch parsley
- At this point, you can start cooking the fritters (as described below), or divide the mixture into two bowls to add other flavors.
Indian-Inspired Corn Fritters
- Add all the additional ingredients and mix carefully with a spatula or a large spoon. Do not overmix the batter.1/2 red onion, 1/2 bunch coriander, 1 tsp Turmeric, 1/4 tsp chili flakes, 1 clove garlic
Mediterranean Corn Fritters
- Add all the additional ingredients to our basic batter and mix carefully with a spatula or a large spoon. Avoid overmixing the batter.50 grams spinach, 100 grams feta cheese, 1/2 red onion
How To Fry The Corn Fritters
- Add a small amount of olive oil to the frying pan.1/4 to 1/2 cup olive oil
- Once the oil is hot, add the batter by using a tablespoon (one tablespoon makes one fritter). Flatten them slightly and fry on medium heat until you see a brown edge forming around the fritter.
- That is your sign to flip the fritter carefully. Reduce the heat to low and cook for a further 2 minutes. While the fritters are cooking, press them down gently with a spatula to ensure even cooking.
- Check if the underside is golden brown. If so, remove the fritters, put them on a plate, and keep them warm in the oven.
- Proceed with the rest of the batter. If necessary, add more olive oil to the pan.
- Serve with our tasty dip (see the notes) and a salad on the side. Enjoy!
