I love zucchini and my zucchini fritters recipe is a fantastic way of using up any large or overgrown zucchini. In my recipe today, I am adding chopped spinach and crumbly feta to make these delicious fritters even tastier.

Zucchini are so easy to grow – just one plant yields so many zucchini that makes it hard to keep up. You may know the feeling when you overlook some of them, and then you end up with overly large zucchini no one wants to eat.

My zucchini fritters are super easy to make and ready in around 30 minutes. They are great for your Sunday brunch, lunch, or a light dinner for these hot Summer evenings.

Simply serve the zucchini fritters with crusty bread (my focaccia bread with sourdough), my quick garlicky dip, and a fresh salad. Hmmm, delicious!

A Few Important Steps For Making Zucchini Fritters

Zucchini contains a lot of water, just like cucumber or cabbage. So once you grate the zucchini, sprinkle over some salt and let it sit for a few minutes.

Then you put the zucchini into a clean tea towel and squeeze as much as you can to drain off the liquid.

Draining off the excess liquid is key to achieving a crispy texture.

Now we can add all the other ingredients like flour, egg, seasoning, and as you will see in my favorite zucchini fritter recipe, a bit of feta cheese and a handful of homegrown spinach.

Here are two important tips: 1. Don’t be tempted to add too much flour even if the batter might look a bit wet.

2. Just slightly mix everything until it all comes together.

The reason is that we want a light yet crispy texture.

Lastly, fry the zucchini fritters on low to medium heat for a few minutes until they cooked through.

It happened to me a few times that I undercooked mine so I learned from my mistake. Patience is the key here.

Delicious Zucchini Fritters with Feta Cheese And Spinach

Our delicious crispy and flavorsome Zucchini Fritters are perfect for your Sunday brunch, a light lunch, or even dinner. Serve it with crusty bread, our garlicky dip, and a fresh salad.

Equipment

Ingredients
  

  • 1/2 large zucchini will yield 1- 11/2 cups of grated zucchini
  • 1 tsp salt I use pink Himalayan salt
  • 125 grams (4oz) Feta cheese crumbled
  • 1 bunch spinach chopped
  • 1 egg
  • 1/2 cup all-purpose flour
  • freshly ground pepper to taste
  • olive oil for frying

Instructions
 

  • Grate the zucchini, put it into a bowl, and sprinkle with the salt. Mix together.
    1/2 large zucchini, 1 tsp salt
  • Let the mixture sit for around 10 minutes. Once the time is up, put the zucchini/ salt mixture into a clean tea towel and squeeze to drain the liquid.
  • Now put the zucchini back into the bowl. Season with pepper.

  • Mix in the egg and fold in the flour.

  • Lastly, add the finely chopped spinach and feta cheese crumbles.

  • Heat the olive oil in the frying pan. With a spoon take out small portions of the batter and place them into the pan.

  • Fry the fritters on medium heat until golden brown and cooked through.
