Dinner is ready in around 30 minutes with our tender chicken breasts in white wine sauce served with crispy garlic bread or cooked rice.
The outcome is flavorful and tender chicken breasts, slowly simmered in a savory garlic and white wine sauce. The key lies in the blend of herbs and the inclusion of whole pickling onions, of which you will need about 15 to 20.
As I mentioned before, the whole dish takes only 30 minutes to cook and it is one of my husbandโs favorite dinners. The chicken breasts in a flavorsome white wine sauce are a light and wholesome meal because I donโt use any cream. Rather, I prepare it with olive oil, fresh herbs, garlic, and an abundance of pickling onions.
You can serve this rustic chicken dish with garlic bread which is our favorite side dish or with aromatic rice.

When you prepare fresh chicken breasts, it is important to cut the surface of the chicken breast crosswise. Then season it with salt and pepper, and finally dust the chicken with all-purpose flour.
The flour will help to thicken the sauce later on.
Peel and crush a couple of garlic cloves and chop a bunch of fresh parsley. You will also need either fresh or dried thyme.
For the white wine sauce, I have used a Sauvignon Blanc which I also serve later to go with our beautiful tasty chicken breasts and garlic bread on the side.
The chicken breasts are pan-fried first in olive oil until golden brown. Once you turn the chicken breast, you can add the herbs, onion, garlic, and of course, the white wine.
Put the lid on and let it simmer for 30 minutes. All done!
Ingredients For The Chicken Breasts In White Wine Sauce Recipe
Our beautiful chicken breast dish consists of only a few simple ingredients. The simpler the dish, the better the quality of the ingredients needs to be in my opinion.
Chicken Breasts: Please get the freshest and best quality chicken breasts possible (if you can afford them). I prefer organic meat because it has usually more flavor and a better texture.
Olive Oil: I am using extra virgin olive oil and plenty of it. But you can use less โ it is up to you. You donโt need to get the most expensive one but a good quality one would be great.
Herbs: Feel free to use an abundance of fresh parsley and thyme. Fresh is best but you can substitute with dried herbs.
Onions and garlic: Again, I recommend getting fresh garlic and small (pickling) onions maybe from your local Farmerโs Market. If you are not too keen on lots of onions, simply use only a few.
White Wine: The white wine sauce is essentially the highlight of the dish, so itโs important to choose a good-quality wine. I recommend using Sauvignon Blanc, which also pairs well with this dish, whether you serve it for dinner or lunch.

We love this simple yet so tasty dish, especially in the summertime when you only want a light dinner, nothing too hearty or heavy.

Tender Chicken Breasts In White Wine Sauce
Equipment
- Tinfoil/Aluminum foil for the garlic bread
Ingredientsย ย
- 3 chicken breasts
- 15 to 20 small (pickling) onions
- 4 tbsp flour
- 2 cloves garlic, chopped
- fresh or dried thyme
- 1 bunch Italian parsley, chopped
- 1 cup dry white wine (your choice)
- 1/3 cup olive oil
- salt and freshly ground pepper
For the garlic bread
- 3 mini baguette
- 1 stick butter
- 1 tsp mixed dried herbs
- 1 clove garlic, grated
- 1 tbsp olive oil
Instructionsย
Prepare the chicken
- Wash the chicken and pat it dry with paper towels.3 chicken breasts
- Cut the breasts in half.
- Cut the surface of the chicken crosswise on both sides.
- Season with salt and pepper.salt and freshly ground pepper
- Coat the chicken breast in flour. Shake off any excess flour.4 tbsp flour
- Set the chicken aside.
Prep the other ingredients
- Chop the parsley and the garlic.2 cloves garlic, chopped, 1 bunch Italian parsley, chopped
- Peel the onions but leave them whole.
Cooking the chicken breasts
- Heat up the oil in the large frying pan.1/3 cup olive oil
- Sear the chicken breasts on both sides until golden brown.
- Add all of the other ingredients and put the lid on.15 to 20 small (pickling) onions, fresh or dried thyme, 1 cup dry white wine (your choice)
- Let it simmer for 30 minutes,
- Serve with garlic bread, and a glass of chilled white wine. Enjoy!
Garlic Bread
- Cut the baguette into slices but don't cut all the way through, so it is still connected.3 mini baguette
- Mix the ingredients with a fork until smooth.1 stick butter, 1 tsp mixed dried herbs, 1 clove garlic, grated, 1 tbsp olive oil
- Spread the garlic butter on the bread slices (on both sides).
- Wrap the baguette individually in aluminum foil.
