I love fruity desserts, and my homemade apple sponge pudding is incredibly comforting and easy to prepare. It is the perfect dessert to finish off a hearty fall or winter meal.
In my apple sponge recipe, I am using apples from my garden. It is a beautiful cooking apple and is also great eaten fresh off the tree.
For this apple sponge pudding, you can use also other apples like Granny Smith for instance.

Ingredients For The Apple Sponge Pudding

The Apples
As mentioned before, I am using homegrown apples from my garden. If you have access to homegrown apples, I highly recommend using them, especially during the autumn harvest season.
Otherwise, use apples that are not too sweet like Granny Smith.
Flour
For this apple sponge recipe, I am using all-purpose flour. You may also use self-raising flour, which already contains baking powder. Feel free to use whatever you have in your pantry.
Sugar
I have chosen to use brown sugar which gives the apples and the sponge a lovely caramelized flavor. You could also use raw sugar or even white sugar.
Tip: if you are using sweet apples, you will need to adjust the amount of sugar you are adding.
Make The Apple Sponge Pudding In A Few Simple Steps
Step 1 – Prepare The Apples

Peel the apples, remove the core, and slice them into thick pieces. Put the sliced apples straight into the baking dish, and add some water, lemon juice, and sugar.
Stew the apples in the hot oven for around 20 minutes. Stir them occasionally and add more water. if needed.
Step 2 – Make The Sponge Batter

Start by beating the butter and sugar with an electric hand mixer until the mix is smooth and fluffy.
Then you can add the vanilla essence, and the eggs, one at a time.
Mix thoroughly after each addition.

Sieve the flour and baking powder and add it gradually to the batter.
This time use a spatula or wooden spoon to mix in the flour.

Start adding the milk as well. Fold it in with a spatula and repeat the process until you have used all of the flour and milk.
The batter should be quite thick and lump-free.
Step 3 – Add The Sponge

Now spoon the sponge on top of the stewed apples. Make sure all the apples are covered.
Final Step

Bake at 350 Fahrenheit/180 Dgrees Celsius for around 30 minutes or until golden brown.
Enjoy with custard, ice cream, and/or on the side. Guten Appetit!
Pro Tip
My apple sponge pudding is easy to prepare in one dish. Instead of stewing the apples in a separate pot, simply stew them in the baking pan.
While the apples are simmering in the oven, you have plenty of time to get the sponge batter ready.

For The Apple Stew
- 1.5 to 2 kg cooking apples
- juice from 1/2 lemon
- 1/2 cup water
- 1/2 cup brown sugar
For The Sponge
- 200 grams soft butter
- 3/4 cup brown sugar
- 1 tsp vanilla essence
- 2 eggs
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 cup milk
Instructions
To Make The Apple Stew
- Peel, core, and cut the apples into thick slices. Put them straight into the baking pan.1.5 to 2 kg cooking apples
- Add the water, lemon juice, and the sugar. Give it a quick stir.juice from 1/2 lemon, 1/2 cup water, 1/2 cup brown sugar
- Put the baking pan into the preheated oven at 350℉/180℃, fanbake. Bake for around 20 minutes or until the apples are soft.Tip: check if you need to add more water.While the apples are cooking, we are making the sponge batter.
The Sponge Batter
- Add butter and sugar to a mixing bowl. Use an electric hand mixer and mix until fluffy. [you can also use a wooden spoon and do it by hand]Now and again scrape down the sides with a spatula.200 grams soft butter, 3/4 cup brown sugar
- Add the vanilla essence plus the eggs, one at a time. Each time, mix everything in until well combined.1 tsp vanilla essence, 2 eggs
- Add the baking powder to the flour and gradually sieve it into the batter. Use a spatula to fold it in.1 1/2 cups all-purpose flour, 2 tsp baking powder
- Now it is time to add the milk as well.Continue the process until you have used up all the milk and flour.3/4 cup milk
- Take the baking pan out of the oven, and spread the sponge batter on top of the stewed apples, so they are covered with the batter.
- Put it back into the oven and let it bake for 30 minutes or until the sponge looks golden brown. Guten Appetit! Enjoy!
