First off, whisk the eggs with the sugar and vanilla extract in a large bowl.

Add the buttermilk, milk, and sourdough starter and whisk until well combined

Combine the baking soda and flour, then incorporate these dry ingredients into the mixture. Continue to whisk until it reaches a thick and smooth consistency.

Cover the bowl and leave the batter to rest for at least 30 minutes.
Heat the greased frying pan on medium heat.
Using a large spoon, scoop the batter and pour it into the pan. Fry until you see bubbles appear.
Once the bubbles appear, flip the pancake with a spatula.
The pancake is cooked when it is golden brown on both sides. It should take around 3 to 4 minutes.
