This oven-roasted potato recipe is bursting with flavors. It uses fresh herbs like rosemary, garlic, and a tiny bit of chili flakes to give it a spicy kick, but that is, of course, optional.

The Ingredients
The ‘Right’ Potatoes

Of course, the star of our flavorsome dish is the potatoes. The success of our dish depends on choosing the ‘right’ type of potato.
Here is what I recommend: I always use waxy potatoes which will result in a crispy outside and a fluffy inside – just what we are looking for.
Waxy potatoes like Yukon Gold, red-skinned potatoes, new and baby potatoes are fantastic choices. They maintain and hold their shape whilst cooking. As a result we achieve a satisfying tray of crunchy, golden roasted potatoes with a buttery almost creamy inside.
Use Fresh Herbs
Flavoring your potatoes goes beyond just adding salt and freshly ground pepper. I recommend using fresh herbs, such as sprigs of rosemary or thyme, instead of dried herbs.
If you can’t get hold of fresh herbs, you can of course use dried ones.
Garlic
I prefer using fresh garlic instead of dried garlic, even though there is a risk that fresh garlic could burn during cooking. To prevent this, you can add the garlic a bit later in the cooking process, around 15 minutes in.
Which Oil/Fat Is Best?
In my opinion, extra virgin olive oil is the best choice for making crispy roasted potatoes in the oven.
However, during Christmas time, I prefer using duck or goose drippings for roasting my potatoes. While it may not be the healthiest option, it is incredibly delicious and flavorful.
How To Make Crispy Oven Roasted Potatoes In A Few Simple Steps

It takes only a few simple steps to make our foolproof recipe for achieving crispy oven-roasted potatoes every time.
Prepare The Potatoes

When I use large potatoes, I first peel them, wash them thoroughly, and then cut them into uniform pieces. To prepare the potatoes, I cut them in half, then quarter them, and finally cut the quarters in half again.
When using baby potatoes, simply scrub the potatoes (no need for peeling), and cut them into quarters.
Parboil The Potatoes

To achieve crispy oven-roasted potatoes, it is essential to parboil them first. Begin by placing the potatoes in a large pot and covering them with water. Put a lid on the pot and bring the water to a boil. Once the water reaches a boil, turn off the heat and let the potatoes sit in the hot water for 5 minutes.
Drain

Place the potatoes in a colander to remove excess water. Allow them to sit until they are nearly dry.
The Seasoning

Arrange the potatoes in a single layer on a large baking sheet. Season them, then add fresh herbs and garlic. Drizzle olive oil over the top and toss the potatoes to ensure they are evenly coated.
Roast

Place the baking sheet into a preheated oven and bake for 30 minutes at 220℃/428℉ (fan-forced) for around 30 minutes.
After 30 minutes, remove the baking sheet and gently press the potatoes down with a potato masher or a fork. Continue baking the potatoes for a further 15 minutes.

- 6 large waxy potatoes or 2lbs baby potatoes (with the skin on)

- 6 sprigs Rosemary

Prep The Potatoes
- Peel the potatoes and cut them with a sharp knife into quarters. Then cut the quarters again into half. Wash the potatoes and place them into a large pot.6 large waxy potatoes
- Add water until the potatoes are barely covered. Cover the pot with a lid and bring the water to a boil. Once the water boils, turn off the heat and leave the potatoes in the hot water for 5 minutes.
- Drain off the water by pouring the potatoes into a colander.
- Arrange the potatoes in a single layer on a large baking sheet. Season the potatoes with salt and pepper, add Rosemary, garlic cloves, and chili flakes.salt and freshly ground pepper, 6 sprigs Rosemary, 6 garlic cloves, chili flakes (optional)
- Drizzle the olive oil over the potatoes and toss them well to ensure they are evenly coated with oil.1/4 extra virgin olive oil
