Delicious Zucchini Fritters with Feta Cheese And Spinach

1/2 large zucchini will yield 1- 11/2 cups of grated zucchini 1 tsp salt I use pink Himalayan salt 125 grams (4oz) Feta cheese crumbled 1 bunch spinach chopped 1 egg 1/2 cup all-purpose flour freshly ground pepper to taste olive oil for frying
Grate the zucchini, put it into a bowl, and sprinkle with the salt. Mix together.

Let the mixture sit for around 10 minutes. Once the time is up, put the zucchini/ salt mixture into a clean tea towel and squeeze to drain the liquid.
Now put the zucchini back into the bowl. Season with pepper.

Mix in the egg and fold in the flour.

Lastly, add the finely chopped spinach and feta cheese crumbles.

Heat the olive oil in the frying pan. With a spoon take out small portions of the batter and place them into the pan.

Fry the fritters on medium heat until golden brown and cooked through.
