If you love making desserts with canned cherries, then this easy cherry sour cream slice recipe is for you. You’ll only need a handful of ingredients, which most likely are already in your fridge and pantry.

You can whip up this delicious sour cream cherry slice in no time. The tangy sour cream and sweet cherries are definitely a perfect match.

The sour cream gives this cake a light, airy texture, making it quite different from the denser style of cheesecake.

As you can see in the picture, my cherry sour cream slice requires only a few ingredients.

I bet you already have most of them in your pantry and fridge.

You’ll want good-quality butter and, ideally, organic, free-range eggs. I also suggest using full-fat sour cream rather than the light version.

As for the biscuits, I am using digestive biscuits. Just use your favorite brand.

Morello cherries are a great choice. Just make sure to drain them well so theyโ€™re as dry as possible; otherwise, the biscuit base could end up soggy.

Adding ground cinnamon to the biscuit base is optional, since I know not everyone likes it.

Lastly, I highly recommend adding lemon zest to the sour cream mixture, as it really enhances the cake’s flavor.

Unfortunately, I didn’t have any at the time of making this delicious cherry sour cream slice.

Extra Tip

Once the cherry sour cream slice is baked, let it cool completely before cutting.

I recommend placing it in the fridge for at least an hour.

Easy And Delicious Cherry Sour Cream Slice

Ingredients
  

  • 200 grams (71/2 oz) plain biscuits
  • 1/2 tsp ground cinnamon
  • 90 grams (3oz) melted butter
  • 1 jar (700ml/25 oz) pitted cherries
  • 2x 250 grams (9 oz) sour cream
  • 1/3 cup (3oz) caster sugar
  • 2 eggs, lightly beaten
  • zest of 1/2 lemon (optional)
  • 1 tbsp powdered sugar

Instructions
 

The Base

  • First off, crush the biscuits either using a NutriBullet (or something similar) or a rolling pin.
    Mix the crushed biscuits with the cinnamon and the melted butter.
    Note: If you don't like cinnamon, you can leave it out.
    200 grams (71/2 oz) plain biscuits, 1/2 tsp ground cinnamon, 90 grams (3oz) melted butter
  • Line a lightly greased baking tin with parchment paper. Make sure the opposite sides are overhanging.
  • Press the biscuit mixture evenly into the tin.
    Note: You can use either your hand, a large spoon, or the back of a cup to do it.
  • Put the tin in the fridge while you prepare the filling.

The Filling

  • Thoroughly drain the cherries using a fine sieve. Use a spoon to press out any excess liquid.
    1 jar (700ml/25 oz) pitted cherries
  • Scatter the cherries on top of the biscuit base.
  • Now it is time to mix the sour cream, castor sugar, and lightly beaten eggs.
    I prefer to use an electric mixer to make sure that the sugar dissolves.
    Note: At this stage, you can add some lemon zest (optional).
    2x 250 grams (9 oz) sour cream, 1/3 cup (3oz) caster sugar, zest of 1/2 lemon (optional), 2 eggs, lightly beaten
  • Pour the mixture over the cherries.
  • Bake in a preheated oven @ 160โ„ƒ/315โ„‰ for about 30 minutes.
  • Let it cool down. You can also put it into the fridge and leave it until the cake is firm.
  • Before serving, dust the cherry sour cream slice with powdered sugar.
    Serve on its own or with some ice cream and whipped cream.
    Enjoy!
