My moist feijoa loaf is my go-to recipe when I have an abundance of Feijoas during the highly anticipated feijoa season here in beautiful New Zealand.

Once feijoas are ripe, there is only a short window to eat them fresh, freeze them, or make delicious cakes or desserts like a Feijoa crumble cake, Feijoa ice cream, or our recipe for moist feijoa loaf.

To make our delicious and super moist feijoa loaf, you only need a few simple ingredients that you likely already have in your pantry.

You can even prepare everything in one pot. This will help you save time and reduce the number of dishes to wash.

Ingredients For The Feijoa Loaf

This recipe calls for juicy, ripe feijoas. So don’t pick them off the tree. Instead, you know the feijoas are ready to eat when they are falling off the tree.

You can also use frozen feijoas. I always have a stash in my freezer because I can’t keep up with the amount of fruit I get in autumn. As I said, established feijoa trees are quite prolific.

Extra Tip: This recipe also works well with stewed apples or pears.

Flour

In this recipe, I am using all-purpose flour but you could use wholemeal flour instead. Another option would be mixing both flour types half and half.

Walnuts

Even though I stated in the recipe card that the walnuts are optional, I strongly recommend adding them to our delicious and moist feijoa loaf. It gives the feijoa loaf a great texture and enhances the overall flavor of the loaf.

How To Make A Moist Feijoa Loaf In A Few Simple Steps

You can enjoy the feijoa loaf sliced with a scoop of ice cream on the side, or topped with a generous layer of butter.

Step 1

Peel the feijoas and cut them into small pieces. Place them into a saucepan with sugar and water.

Step 2

Bring to a boil and let it simmer for 5 minutes. Take the stewed feijoas off the heat and transfer them to a mixing bowl. Alternatively, you can use the saucepan as a mixing bowl to save on dishes.

Step 3

stir in flour

Stir in the rest of the ingredients and mix until well combined. Do not overmix! The cake batter is quite wet, so there’s no need to worry about it.

Last Step

Line a loaf pan with parchment paper and fill in the batter. bake in a preheated oven for at least 45 minutes or until a skewer comes out clean.

Pro Tip

Cut the feijoa loaf into slices and divide it into portions, placing them in plastic bags. They freeze well or can be stored in the fridge for a few days.

To Stew The Feijoas

  • 8 feijoas
  • 1 cup raw sugar
  • 3/4 cup water

The Cake Batter

  • 50 grams (2oz) butter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup walnuts

Instructions
 

Stew The Feijoas

  • First off, we peel the feijoas and cut the them into smallish cubes. Put the chopped feijoas into a small sauce pan.

  • Add the water and sugar and give it a good stir. Bring the mix to a boil and let it simmer for around 5 minutes.
    1 cup raw sugar, 3/4 cup water
  • Take the stewed feijoas off the heat and let them cool down for a few minutes.
    Note: at this stage, you can either transfer the stewed fruit to a mixing bowl, or you can add the ingredients for the batter using the same sauce pan (if it is big enough)

The Cake Batter

  • Now, you add the butter into the still warm fruit stew. That way, the butter can melt.
    50 grams (2oz) butter
  • Mix the baking powder and baking soda with the flour and stir into the fruit with a spatula.
    2 cups all-purpose flour, 1 tsp baking powder, 1 tsp baking soda
  • Chop the walnuts finely using a sharp knife.
    1/2 cup walnuts
  • In a cup, beat the egg and add to the cake batter along with the walnuts and fold it in until well combined.

Baking

  • Preheat the oven to 180℃/350℉, fan-forced setting.
  • Line a loaf pan with baking paper (parchment paper).
  • Fill in the cake batter and bake the loaf for around 45 to 60 minutes, depending on your oven. Check after 45 minutes if a skewer comes out clean. If not leave it a bit longer.
  • Remove the feijoa loaf from the pan and let it cool down before serving. Enjoy with ice cream on the side or topped with a little bit of butter.

A feijoa is a small fruit with thick green skin. Its flesh is juicy and has a sweet, aromatic flavor, but can also taste quite tart depending on the variety.

You can either cut the feijoa in half and scoop out the flesh with a teaspoon, or peel it and slice it. However, I find scooping out the flesh to be the easiest method.
