To Stew The Feijoas

  • 8 feijoas
  • 1 cup raw sugar
  • 3/4 cup water

The Cake Batter

  • 50 grams (2oz) butter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup walnuts

Instructions
 

Stew The Feijoas

  • First off, we peel the feijoas and cut the them into smallish cubes. Put the chopped feijoas into a small sauce pan.

  • Add the water and sugar and give it a good stir. Bring the mix to a boil and let it simmer for around 5 minutes.

  • Take the stewed feijoas off the heat and let them cool down for a few minutes.
    Note: at this stage, you can either transfer the stewed fruit to a mixing bowl, or you can add the ingredients for the batter using the same sauce pan (if it is big enough)

The Cake Batter

  • Now, you add the butter into the still warm fruit stew. That way, the butter can melt.
    50 grams (2oz) butter
  • Mix the baking powder and baking soda with the flour and stir into the fruit with a spatula.
    2 cups all-purpose flour, 1 tsp baking powder, 1 tsp baking soda
  • Chop the walnuts finely using a sharp knife.

  • In a cup, beat the egg and add to the cake batter along with the walnuts and fold it in until well combined.

Baking

  • Preheat the oven to 180℃/350℉, fan-forced setting.
  • Line a loaf pan with baking paper (parchment paper).
  • Fill in the cake batter and bake the loaf for around 45 to 60 minutes, depending on your oven. Check after 45 minutes if a skewer comes out clean. If not leave it a bit longer.
  • Remove the feijoa loaf from the pan and let it cool down before serving. Enjoy with ice cream on the side or topped with a little bit of butter.
