My best apple shortcake recipe features classic ingredients such as flour, eggs, butter, and sugar.

For the apple filling, I like to use canned apples to keep the recipe easy and convenient to make any time of the year.

However, if you choose to use fresh apples, be sure to stew them first and drain off all the cooking liquid before adding them to the mixture.

Note: Please don’t add any sugar when you make the apple stew.

I highly recommend keeping a couple of cans of apple pie filling in your pantry so you can whip up the recipe whenever unexpected guests arrive.

How To Make A Delicious Apple Shortcake In A Few Simple Steps

Step 1

Beat butter and sugar with an electric beater until it is light and creamy. Scrape the sides with a spatula now and again.

Lightly beat a couple of eggs and add them gradually. Make sure to incorporate them well.

Step 2

Sift the flour and ground cinnamon into the mixture, then fold it in with a large metal spoon.

Step 3

Lightly grease a baking tin and line it with non-stick baking paper. Please make sure that the sides are overlapping so you can remove the cake after baking with ease.

Now is a good time to preheat the oven to 180 degrees Celsius/350 degrees Fahrenheit. I prefer to use the fan-forced setting.

Step 4

Spread half of the mixture evenly into the tin.

Layer the canned apples on top, then sprinkle with some caster sugar.

Cover the apples completely with the remaining mixture, spreading it out smoothly.

Step 5

Bake the apple shortcake for about 45 minutes, until itโ€™s golden brown or a wooden skewer inserted in the center comes out clean.

Let the cake cool for 10 minutes before taking it out.

Final Step

Dust the apple cake with icing sugar and cut into generous squares.

Apple shortcake is delicious on its own, but itโ€™s even better with a scoop of ice cream and a dollop of whipped cream on the side.

  • 185 g (6oz) butter
  • 3/4 cup (185g/6oz) caster sugar
  • 2 eggs, lightly beaten
  • 1 1/2 cups (185g/6oz) all-purpose flour
  • 1/2 tsp ground cinnamon
  • 425 g (13 ยฝoz) can pie apple
  • 1 tbsp caster sugar
  • icing sugar to sprinkle

Instructions
 

  • Beat the butter and sugar with the electric mixer until light and creamy.
    185 g (6oz) butter, 3/4 cup (185g/6oz) caster sugar
  • Gradually add the eggs and beat until well incorporated.
    2 eggs, lightly beaten
  • Sift the flour along with the cinnamon and fold in gently.
    1 1/2 cups (185g/6oz) all-purpose flour, 1/2 tsp ground cinnamon
  • Preheat the oven to 180โ„ƒ/350โ„‰ (fan-forced) and line the slightly greased baking pan with baking paper.
    Note: make sure that the paper is overlapping on both sides.
  • Spread half of the mixture into the baking pan. Spread the apples on top and sprinkle with the caster sugar.
    425 g (13 ยฝoz) can pie apple, 1 tbsp caster sugar
  • Now add the other half of the mixture on top of the apples. Spread it out making sure to cover the apples completely.
  • Bake in the preheated oven for 40 to 45 minutes until golden brown.
  • Leave to cool for around 10 minutes. Then, take the apple shortcake out and let it cool completely.
  • Sprinkle with some icing sugar.
    Cut into generous squares and either serve on its own or with whipped cream and ice cream.
