Light & Buttery Apple Shortcake

Ingredients
  

  • 185 g (6oz) butter
  • 3/4 cup (185g/6oz) caster sugar
  • 2 eggs, lightly beaten
  • 1 1/2 cups (185g/6oz) all-purpose flour
  • 1/2 tsp ground cinnamon
  • 425 g (13 ½oz) can pie apple
  • 1 tbsp caster sugar
  • icing sugar to sprinkle

Instructions
 

  • Beat the butter and sugar with the electric mixer until light and creamy.

  • Gradually add the eggs and beat until well incorporated.

  • Sift the flour along with the cinnamon and fold in gently.

  • Preheat the oven to 180℃/350℉ (fan-forced) and line the slightly greased baking pan with baking paper.
    Note: make sure that the paper is overlapping on both sides.
  • Spread half of the mixture into the baking pan. Spread the apples on top and sprinkle with the caster sugar.

  • Now add the other half of the mixture on top of the apples. Spread it out making sure to cover the apples completely.
  • Bake in the preheated oven for 40 to 45 minutes until golden brown.
  • Leave to cool for around 10 minutes. Then, take the apple shortcake out and let it cool completely.
  • Sprinkle with some icing sugar.
    Cut into generous squares and either serve on its own or with whipped cream and ice cream.
