Beat the butter and sugar with the electric mixer until light and creamy.
185 g (6oz) butter, 3/4 cup (185g/6oz) caster sugar
Gradually add the eggs and beat until well incorporated.

Sift the flour along with the cinnamon and fold in gently.

Preheat the oven to 180℃/350℉ (fan-forced) and line the slightly greased baking pan with baking paper.Note: make sure that the paper is overlapping on both sides. Spread half of the mixture into the baking pan. Spread the apples on top and sprinkle with the caster sugar.
425 g (13 ½oz) can pie apple, 1 tbsp caster sugar
Now add the other half of the mixture on top of the apples. Spread it out making sure to cover the apples completely.
Bake in the preheated oven for 40 to 45 minutes until golden brown.
Leave to cool for around 10 minutes. Then, take the apple shortcake out and let it cool completely.
Sprinkle with some icing sugar. Cut into generous squares and either serve on its own or with whipped cream and ice cream. icing sugar to sprinkle
