Today, I want to share an easy German Christmas cookie recipe with you that has been in our family for almost forty years.
The Christmas holidays are such a special time in our family, and making these particular Christmas cookies has always been part of the pre-Christmas tradition in our household.
Now, the name Jungferntrost is super old-fashioned and means ‘virgin comfort.’ But don’t let this name hold you up from making this cookie recipe for the holidays.
Store the cooled Christmas cookies in a tin, and they will keep for at least a month.

Recipe Ingredients
For our easy Christmas cookie recipe, Jungferntrost, you’ll only need three main ingredients: good quality butter, icing or powdered sugar, and slivered almonds.
To make the cookies extra light, I am adding a little bit of corn flour. You can also add a small amount of vanilla extract.
Simply mix all these ingredients with your hands and knead until you have achieved a smooth dough.
Shape the cookie dough into a rectangular log, wrap it with plastic wrap, and let it rest in the fridge for 30 minutes.
Now you can easily cut it into slices and bake it in the oven.

Extra Tip

Jungferntrost – An Old Fashioned German Christmas Cookie Recipe
Equipment
- cling wrap
Ingredients
- 125 grams slivered almonds
- 250 grams all-purpose flour
- 100 grams icing (powdered) sugar
- 100 grams cornflour
- 200 grams butter (cut into cubes)
- 1/2 tsp vanilla extract
Instructions
- Put your dry ingredients into a bowl and mix either with a fork or a whisk to combine.125 grams slivered almonds, 250 grams all-purpose flour, 100 grams icing (powdered) sugar, 100 grams cornflour
- Add the butter and vanilla extract and start mixing the ingredients with your hands.200 grams butter (cut into cubes), 1/2 tsp vanilla extract
- Once the mixture resembles crumbs, place it on your benchtop and continue mixing until it is all combined.Note: The cookie dough will appear quite dry, but after a few minutes, it will all come together.
- Form a ball or a disk, and cut it into 3 equal pieces.Form each piece into a rectangular log-like shape. Wrap the logs individually with cling wrap and put it into the fridge for 30 minutes.
- While you are waiting, line a baking sheet with baking paper and preheat the oven to 180โ/350โ.
- After 30 minutes, remove the cling wrap and cut the logs into thick slices. You should get nice rectangular-shaped cookies.
- Place the cookies onto the baking sheet and bake for 8 to 10 minutes or until golden brown.
- Let them cool down completely on a cooling rack before transferring to a cooking tin or jar. Enjoy with a lovely cup of tea or coffee.
