Jungferntrost - An Old Fashioned German Christmas Cookie Recipe
This Christmas cookie recipe has been in my family for over 40 years. Since then, it has been part of our family tradition to make it every year for Christmas. It is so easy to make and tastes delicious.
Add the butter and vanilla extract and start mixing the ingredients with your hands.
200 grams butter (cut into cubes), 1/2 tsp vanilla extract
Once the mixture resembles crumbs, place it on your benchtop and continue mixing until it is all combined.Note:The cookie dough will appear quite dry, but after a few minutes, it will all come together.
Form a ball or a disk, and cut it into 3 equal pieces.Form each piece into a rectangular log-like shape. Wrap the logs individually with cling wrap and put it into the fridge for 30 minutes.
While you are waiting, line a baking sheet with baking paper and preheat the oven to 180℃/350℉.
After 30 minutes, remove the cling wrap and cut the logs into thick slices. You should get nice rectangular-shaped cookies.
Place the cookies onto the baking sheet and bake for 8 to 10 minutes or until golden brown.
Let them cool down completely on a cooling rack before transferring to a cooking tin or jar. Enjoy with a lovely cup of tea or coffee.
