Ingredients

  • 125 grams slivered almonds
  • 250 grams all-purpose flour
  • 100 grams icing (powdered) sugar
  • 100 grams cornflour
  • 200 grams butter (cut into cubes)
  • 1/2 tsp vanilla extract

Instructions

  • Put your dry ingredients into a bowl and mix either with a fork or a whisk to combine.
125 grams slivered almonds, 250 grams all-purpose flour, 100 grams icing (powdered) sugar, 100 grams cornflour
  • Add the butter and vanilla extract and start mixing the ingredients with your hands.
200 grams butter (cut into cubes), 1/2 tsp vanilla extract
  • Once the mixture resembles crumbs, place it on your benchtop and continue mixing until it is all combined.
Note: The cookie dough will appear quite dry, but after a few minutes, it will all come together.
  • Form a ball or a disk, and cut it into 3 equal pieces.
Form each piece into a rectangular log-like shape.
Wrap the logs individually with cling wrap and put it into the fridge for 30 minutes.
  • While you are waiting, line a baking sheet with baking paper and preheat the oven to 180℃/350℉.
  • After 30 minutes, remove the cling wrap and cut the logs into thick slices.
You should get nice rectangular-shaped cookies.
  • Place the cookies onto the baking sheet and bake for 8 to 10 minutes or until golden brown.
  • Let them cool down completely on a cooling rack before transferring to a cooking tin or jar.
Enjoy with a lovely cup of tea or coffee.
