For Best Results, Put The Dough For Sourdough Focaccia Into The Fridge Overnight

This easy, bubbly, and no-knead focaccia made with with a sourdough starter will impress everyone.
The handling time is minimal, but you'll need to wait a few hours for the dough to be ready.
I highly recommend this sourdough focaccia recipe to anyone who is new to baking with sourdough. Have fun with it and enjoy this chewy focaccia with a lovely crusty outside.

Timeline for making the Sourdough Focaccia:
9am: take your sourdough starter out of the fridge and feed it with water and flour; put into a warm place and wait until it has risen and shows bubbles - it means your starter is active
1pm: put the dough together as seen in the video; let it rest for 30 minutes
1.40pm: do your first set of stretches and folds; cover and let the dough rest for 30 minutes again
2.15pm: do your second (and final) set of stretches and fold
2.20pm: oil the same bowl (I am transferring the dough into a glass dish with a lid, so you can see the bubbles) with olive oil, rub some oil on the dough as well; fold it in itself, cover and let it bulk ferment in a warm place for at least for hours
2.30 to 6.30pm: bulk fermentation
6.30pm: put the dough into the fridge overnight
Next day, 8am: take the container with the dough out of the fridge, leave in a warm spot until it reaches room temperature
11 am: prepare baking pan and carefully tip the dough into the baking pan, fold over and flip upside down so the smooth part is on the top, cover with cling wrap and leave to rest for 3 hours
14.15pm: preheat the oven to 220 degrees Celsius/425°F; drizzle the dough with olive oil and press dimples with your fingertips
Once the oven is hot, bake for about 20 to 25 minutes
Enjoy!
Note: You can leave the dough longer in the fridge. For example, if you want to have the bread for your evening dinner, take the dough out at around 11 a.m. and bake it at 6 p.m.
