The main ingredient, of course, is the fish, and the choice of what kind of fish you’d like to use is up to you. Let’s talk about it.

The Fish

For this fish cakes recipe, I used a can of tuna in spring water. Another great choice is also pink salmon.

I have also made this recipe with leftover fried fish and smoked fish. A very popular fish around New Zealand and Australia is the kahawai, which is versatile to prepare and very tasty.

But of course, you could use any kind of fish, like salmon, trout, or snapper, just to name a few.

Potatoes

Since this fish cakes recipe calls for mashed potatoes, you want to use potatoes that are great for mashing.

The most convenient way here would be to use any leftover mashed potatoes from last night’s dinner.

Otherwise, simply cook the potatoes and mash them with a little bit of seasoning. By the way, there is no added butter or milk required.

Herbs And Spices

For the recipe, I kept things quite simple. I used spring onions for added flavor along with some dried chili flakes.

You can also use Asian-inspired herbs and spices such as coriander, turmeric, garlic, and ginger.

How To Make Our Easy Fish Cakes Recipe In A Few Simple Steps

Our easy fish cakes recipe is budget-friendly and ready in under an hour (if you don’t have leftover mashed potatoes).

The fish cakes are light on the inside and nice and crunchy on the outside, thanks to the breadcrumbs.

Make Mashed Potatoes

If you don’t have any leftover mashed potatoes, then of course, we have to prepare them for this fish cake recipe.

Wash and peel the potatoes, and cut them into small pieces.

Add water until the potatoes are barely covered. Bring them to a boil and let the potatoes simmer until they are tender. It should only take around 10 minutes.

Drain the water, and season the potatoes with salt and pepper.

Mash the potatoes until they are smooth; a few lumps are okay. Set aside and let the potatoes cool down.

Note: When making mashed potatoes, I usually add butter and milk or cream. However, for this recipe, you can skip this step.

Prepare The Other Ingredients

As the potatoes cool down, roughly chop some spring onions.

Place them in a bowl with an egg and the drained tuna.

Add the mashed potatoes, the seasoning (salt, freshly ground pepper, chili flakes), plus a bit of flour to bind everything together.

With your hands, mix until it is well combined. You may have to add a little bit more flour as you go along.

Form The Fish Cakes And Fry

With slightly wet hands form the fish cake patties and cover them with breadcrumbs.

Heat either avocado or olive oil in a heavy frying pan and add the fish cakes.

Fry the fishcakes on both sides on medium heat until golden brown.

Serve while they are still hot with condiments of your choice. I love them with kimchi on the side. It tastes so delicious.

Ingredients
  

  • 3 large potatoes or 2 cups leftover mashed potatoes
  • 2 spring onions
  • 1 egg
  • 2 tbsp plain flour
  • 1 tin tuna or pink salmon
  • chili flakes optional
  • salt and freshly ground pepper to taste
  • 1 cup bread crumbs
  • avocado oil for frying alternatively olive oil

Instructions
 

  • If you don't have leftover mashed potatoes, peel the potatoes and cut them into small pieces. Put them into a saucepan and add water until they are almost covered.
    Bring to the boil and let the potatoes simmer until tender (around 10 minutes).

  • Drain the water, season with salt and pepper, and mash using a potato masher.
    Set aside to let them cool down.
  • Open a tin of tuna or pink salmon and drain off the liquid. Put the fish into a bowl.

  • Finely chop the washed spring onions, and add them to the fish along with the egg. Season with salt, pepper, and chili flakes (optional).

  • Once the mashed potatoes have cooled, add them to the bowl plus half of the flour.
    Mix thoroughly with your hands. If you feel that the mixture is too wet, add a little bit more flour.

  • With wet hands, form the patties. (You decide how big or small you like them)
    Cover the fish cakes with breadcrumbs.

  • Heat the oil of your choice in a skillet and fry the fish cakes on medium heat on both sides until golden brown.
    Keep them warm until you have used up the entire mixture.
